It’s been an inward facing time that has allowed me to move through some big and beautiful inner shifts. If you’ve stopped by my Instagram or blog in the past few months, you might have noticed that I haven’t posted anything new in a while. Butternut Breakfast Hash w/ Chipotle Sauce.Instead of quinoa, you could add in another cooked grain such as brown rice or barley, or try chickpeas!.The filling for these squash boats is very versatile and works great with peppers, onions, shallots, spinach, mushrooms, green beans, brussels sprouts, sweet potatoes, etc. Swap in whatever veggie odds and ends need to get used up.The pomegranate seeds are optional, but so fun!!! And pretty!!.
DELICATA SQUASH FREE
Feel free to swap the hazelnuts for other nuts or seeds such as pecans, pumpkin seeds, or walnuts.Note that the peels on other kinds of squash aren’t edible. This recipe works great with other kinds of squash such as butternut or acorn squash, but it’s harder to cut them in half lengthwise so be careful!! Be sure to cut off the top and bottom first.You can also discard the peel and easily scoop out squash with a spoon. Sidenote: Did you know that you can eat the peel on delicata squash? When roasted it becomes soft and yummy and you can eat it with a fork and knife. Load up the boats and drizzle on sauce and garnishes.
